Sounds like a fuel issue to me as well, unless, have you checked to make sure plug wires are running to proper cyliders. In other words, proper firing order. Check to see if you have a couple swithched wires, that'll cause it to react the way it's acting as well.

If you are still having problems with it i would double check the marks on your harmonic balancer. I have expierienced th same issue with a 350. The outer metal ring had slipped almost 24 degrees. And when i timed it yo what i thought was right it would choke out when you got on it and it would run poorly at idle. take out the number one spark plug and peek inside to verify that you truly are at TDC.

LMAO.... it's actually more like a simple carb air/fuel ratio carb adjustment, if that doesn't do it adjust the cam on the accelerator pump to give a better squirt.
it needs to be adjusted to obtain the most vacuum you can get outta it at an idle.
the screws are on the side of the holley float bowls.
