I have a 2000 Dodge Dakota with a 5.9 liter v8 four speed automatic and full time 4x4,I am seeking ways to improve my fuel milege and am considering switching to synthetic oils in the differentials and transfer case. I would also like to install manual hubs, is this possible?. What about changing the air intake?.

While synthetics are great, you may gain .5-1 mpg from all of that.
Your best bet for better fuel economy would be to tune up your truck, clean the air filter, new fuel filter, new plugs, and then drive like a grandma. Let's face it, the 5.9 is a big thirsty engine, it will never be a mileage god.
---------------------------------------------------------------- My truck has recently been described as both "Boring and Mechanical". And I love it!

Yes a 360 while a good mill overall is well known for its fuel usage. They only way to get reasonably good MPG with V8 Dakota is not to have a 360 in it. Best you can do is maybe a good tune, clean fluids and stock sized and smooth treaded tires at or near max pressure and hope.

Cold air intake is not going to improve MPG. It is a myth with FI engines. In theory you might gain a little MPG with warm air intake as this leans overall mixture a bit and reduces pumping losses too. Headers can REDUCE MPG around town too. (you do not want cylinder pressures to blown down to quickly at lower RPM's as it is the expansion of this gas pressure in cylinders that drives pistons down)
